This Geisha comes from Silent Springs, an experimental planting in Moorpark where every tree is grown inside high tunnels, a cultivation method rarely seen outside the Golden State. Adapted from California's berry industry, these tunnels provide protection from frost and the powerful Santa Ana winds that sweep through the region each year.\u003c\/span\u003e\u003c\/p\u003e\n\u003cp class=\"isSelectedEnd\"\u003e\u003cspan\u003eThe tunnels create a more stable growing environment while also raising temperatures slightly, encouraging a small amount of fermentation within the cherries before they arrive at the mill. Although this coffee is fully washed, that gentle pre-fermentation contributes a subtle wine-like character more commonly associated with natural-processed coffees.\u003c\/span\u003e\u003c\/p\u003e\n\u003cp class=\"isSelectedEnd\"\u003e\u003cspan\u003eThis lot was processed using our yeast-washed method, a precision-driven approach that stabilizes fermentation through a controlled yeast inoculation. Cherries are handpicked at peak ripeness, floated to remove defects, pulped, and transferred to buckets in a cold room. There, they are inoculated with \u003c\/span\u003e\u003cem\u003e\u003cspan\u003eSaccharomyces cerevisiae\u003c\/span\u003e\u003c\/em\u003e\u003cspan\u003e and fermented for three days before being dried on raised beds to a stable moisture content of 11%.\u003c\/span\u003e\u003c\/p\u003e\n\u003cp\u003e\u003cspan\u003eIn the cup, this Geisha offers an expressive profile of violet and lavender florals layered with notes of grape, ripe plum, and milk chocolate.
