Enzyme washed is a variation on our traditional washed method: specific enzymes let us ferment with native yeasts at colder temperatures while still achieving full pectin release. The colder approach retains more aromatic complexity, evident in the cup’s delicate florality and bright, lime-like acidity.\u003c\/p\u003e\n\u003cp dir=\"ltr\"\u003eCherries were hand picked at peak ripeness, floated to remove defects, milled, and fermented with enzymes for 40 hours.
