Expect notes of caramel, almond cookie, and milk chocolate, with a gentle brightness that keeps things interesting.

Grown at Knopf Knoll Ranch in Carpinteria, this coffee thrives in a rare Southern Californian subtropical coastal microclimate. The region’s northern latitude and cool ocean influence combine with low elevation to create growing conditions that mirror high-altitude farms in the tropics—proof that world-class coffee can come from outside the traditional coffee belt.

After selective hand-picking at peak ripeness, the cherries were floated to remove defects, then inoculated with Saccharomyces cerevisiae yeast and cold-fermented for 72 hours. This yeast-washed process enhances the coffee’s natural sweetness and creates clean, layered complexity.

Catuaí Rojo is a cross of Mundo Novo and Caturra that was developed in Brazil. It is widely cultivated throughout the Americas and is prized for its sweetness, body, and balance, which is all on full display in this lot from Carpinteria.
