Nestled in the unique microclimate of Bonsall California, Brewster Farms is a family-owned agricultural operation dedicated to the art of growing high-quality coffee, like this yeast washed Geisha.
Bonsall is inland from Oceanside, an idyllic Southern Californian beach town. The area benefits from mineral-rich soil, rolling hillsides, and cool coastal breezes. All of which combine to provide conditions similar to high-elevation farms in the tropics. Like all California coffee, there is an extended ripening period that produces higher cup complexity and sweetness.
Coffee cherries were hand-picked at peak ripeness, floated to remove defects, then fermented for 66 hours in a semi-anaerobic tank with LALCAFÉ Intenso yeast, which is selected for fermentation stabilization rather than flavor addition, before finally being washed and dried on raised beds for 17 days to a stable moisture of 10.5%.
The result is this mellow, fruit-forward cup that serves as a liquid map of Brewster Farms' unique San Diego terroir.
