Ireland Family Farm is located in Fallbrook, a town in North County San Diego known as "The Avocado Capital of the World." The farm sits at just 190 meters above sea level—low by international standards, but right in the sweet spot for California. At 33°20' latitude, the farm sits beyond the traditional boundary of the Tropic of Cancer, where higher latitude compensates for lower elevation and creates growing conditions comparable to high-altitude farms in Panama and Colombia. The result is a remarkably long 10-month ripening period that allows the fruit to develop exceptional complexity and sweetness.

This coffee was picked at peak ripeness, floated to remove defects, wet-milled at our post-harvest facility in Ventura, inoculated with Saccharomyces cerevisiae, fermented for 62 hours semi-aerobically, and laid out to dry for 24 days to a stable moisture of 10.3%.
