Our first release from the 2025 harvest is a yeast washed California Bourbon from Condor Ridge Ranch, the oldest coffee farm in California. Warming, spicy, and sweet like an apple Tarte Tatin, it introduces one of the themes of this season: tradition elevated through modern technique.
Here, Bourbon cherries underwent a classic washed process, then received a carefully calibrated yeast inoculation to highlight the variety’s natural spiced apple tone and create a lush, syrupy texture that pairs beautifully with pastry. This coffee captures a harmony of terroir, varietal, and process that is now a hallmark of California-grown coffee’s evolving identity.
Condor Ridge Ranch is the farm at the genesis of California-grown coffee. Originally known as Good Land Organics, it is a beautifully lush exotic fruit farm tucked away in the hills above the rugged Gaviota coast, a microclimate that consistently yields our highest-scoring and most in-demand coffees.
Bourbon is one of the oldest Arabica coffee varieties in the world. Originally found in Yemen, it was later transplanted to the African island of Bourbon (now Réunion) by French horticulturists in the 1700s. From there it circumnavigated the globe and became the parent to many of the varietals grown in the Americas. Its enduring appeal lies in its natural sweetness and balanced acidity, qualities that, after centuries of cultivation, now find a new voice in California’s distinctive terroir.
