This lot brings together two of California’s iconic harvests: red wine and Geisha coffee.
This naturally processed Geisha from Condor Ridge Ranch underwent an experimental two-day stage in which whole cherries were fermented in barrels with a red wine solution. In coffee, this is known as co-fermentation, a process that involves introducing fruits, spices, or botanicals to guide fermentation and expand the flavor spectrum.
The result isn’t a Cabernet in your cup, but something more elusive: the winey character coffee people often associate with eastern Ethiopia or select Kenyan lots. It’s jammy, tangy, and alive with purple-fruited vibrancy.
Of course, everything begins with the quality of the green coffee itself. For this lot we selected fully ripe cherry from Condor Ridge Ranch in Goleta—the oldest coffee farm in California and the source of many of our highest-scoring coffees.
