Foggy Oaks – Geisha-Laurina MixNatural - Fallbrook, CA
This “Geisha-Laurina Mix” comes from Foggy Oaks, a small, family-run farm in Fallbrook, a town in San Diego County also known as “The Avocado Capital of the World.” The farm strives to implement as much organic and regenerative practices as possible. The idea to start this project came from the owners’ experience volunteering with coffee cooperatives in Costa Rica and Panama.
California farms that grow great avocados can also grow beautiful coffee. And though small, this farm has produced a standout: exotic Geisha and delicate Laurina lots blended together, resulting in a deeply expressive cup.
The diversity of varieties in this blend creates a complex and beguiling profile that leans red: think hibiscus, rose, cherry, and pomegranate, all anchored by a base of baking spice and brown sugar for richness and balance.
This lot was processed in the natural style. Coffee was picked at peak ripeness, floated to remove immature beans. We then fermented them in barrels in a cold chamber for 72 hours. We gave the cherries a light post-fermentation wash, then laid them out to dry: first outdoors on raised beds, then inside our climate-controlled drying room. Over the course of three weeks, they reached a stable moisture level of 10.5%. After drying, the cherries were rested for two months in a separate climate-controlled room to further stabilize. Finally, they were dry milled, classified, and hand-sorted according to SCA Green Coffee protocols.
